Pint-Sized Apple Pies

Introduction

I'm a sucker for a good slice of pie. The trouble with baking pies is that then there is an entire pie lurking on the counter or in the fridge. And when there's a whole pie to tempt you, portion control is difficult.
My pint-sized apple pies, adapted from a recipe from my mom, solves that problem: They're instantly portion controlled. Plus, little ones can easily help.

Number of Servings: 6

Ingredients

    1 9-inch pie crust (go ahead and buy one. Get the refrigerated roll-out kind, not the frozen kind)
    3 medium apples, peeled if you like. (I like Johnathan, Fuji or Pink Lady)
    1 T sugar
    1 t cinnamon
    1/2 sheet of graham crackers, crumbled

Directions

Makes 6 mini pies
Preheat oven to 400 degrees Fahrenheit.
Peel apples, if you want, then slice. If kids are helping, let them cut the slices into cubes using a plastic knife.
Roll out pie crust, then use a 4-inch round cookie cutter (or a bowl) to cut out rounds from the pie crust. Again, let kids help with this one. (There will be leftover pie crust. Either roll it out again for additional pie crusts or discard.) Place pie crusts on a baking sheet.
Let kids mix apples with cinnamon and sugar. Let kids place apples in the middle of the crusts, then top with the graham cracker crumbs. Fold edges of pie crust around apples.
Bake 30 minutes, or until crust is golden. Allow to cool 10 minutes before serving.
Serves 6.

  • I will retry this by not only unrolling the pie crust, but running a pin over it to make it thinner before loading it up with apples. Way too much crust to apple ratio, and there was so much of the apple mixture leftover. I baked the remaining in a pie dish & used it for oatmeal the next day. - 9/21/11
