    1 box spice cake mix
    1 15oz. can pure pumpkin

Directions

Simply mix the pumkin and the spice cake mix powder together and drop by heaping tablespoons into greased muffin cups.
Bake at 350 18-22 minutes or until a knife comes out clean

    I make these all the time but add 1/2 cup water because the mixture is so thick. I use my mini muffin tins and get about 38 muffins out of the mix. Then I place 5 muffins in pint size baggies and freeze. It's like having my own 100 cal snack packs but without paying the high price for store bought. - 7/23/09

    I tried this method with Spice cake and Carrot cake, and they were both really good, but the Carrot cake was incredible! So delicious. I cheated a little and added just a dime size drop of cream cheese frosting to it, and it was great. I recommend this muffin recipe, its wonderful! - 4/7/09

    AWESOME. I was actually looking for a pumpkin/flax seed muffin recipe and this recipe was elsewhere but with the flax seed meal added. So I made these muffins with 1 box spice cake mix, 1 egg, 1 can of pumpkin, 1/2 cup of water, 1/2 cup of flax seed meal. They are sooo good and easy. - 1/20/08

    I love this recipe...been baking these for years. It's actually an old Weight Watcher's recipe and a very good one. You don't have to add water or anything to the recipe mix...the cupcakes will be more moist if you don't. You can also substitute other cake mixes....I sometimes use devil's food. - 10/29/08

    Wonderful recipe and so easy. I used vanilla cake and yellow cake mix when I have made them and they taste great. The kids love them and such an easy recipe they can help make them. This is a keeper! - 3/11/09

    I made a loaf of bread from this. It turned out really well. I added cinnamon and ginger for more flavor. Everyone who tried it said it was just as good as the real thing. Next time I will add walnuts or pecans. Very moist!! - 12/4/07

    AMAZING! I made them exactly as the recipe said, using Duncan Hines Spice Cake. Great muffin texture, not dense, not too light, not doughy. When I asked my husband what he thought ... "I'll let you know after about 6 more!" It made 18, nice size muffins, and now I look forward to experimenting! - 4/4/09

    Tried and tried this several different ways. The best way was this: CARROT cake mix, a can of pumpkin, 1/4 cup of applesauce and 1/4 cup of water. After several trials, that was the easiest and tastiest method. Our favorite muffins are Panera or Atlanta Bread's pumpkin muffins. Try the change! - 1/17/11

    This is a great starting point. I took a white cake mix and added pumpkin pie seasonings and I added water to make a smooth batter. Gave them to a friend's family who was just home from having a baby and they loved them!!! So thanks for sharing! - 8/11/09

    hi, i'll tell you what , i was looking for something quick w/pumpkin & came across this recipe & they are great. i used the spice cake mix and added applesauce. then i only had one box so i used a quick bread i had also & added nuts & applesauce & a drop of almond extract. they are good too.thanks - 1/19/09

    These were great! I beat together some softened fat free cream cheese and 1/3 c splenda for a sweet frosting on top! Loved it... was a little skeptical with only 2 ingredients, but this recipe proved to be a winner! - 10/3/08

    I used a carrot cake mix couldn't find a spice one. I added 1/2 cup water and cinnamon, nutmeg and cloves and made it in a bundt pan cooked for about 35-40 minutes and it was very good. I would definitely make it again and it was so EASY. - 4/13/08

    I added 1-1/2 cups water, and it still came out good. I recommend using gluten free or sugar free cake mixes to make not as unhealthy.
    I also added 1-1/2 teaspoons of cinnamon and 1 teaspoon of nutmeg. - 11/27/09

    I love love love these. And my 2yo who is allergic to eggs and milk can't have regular cupcakes, so SHE loves these, too! I use a hfcs free/organic cake mix and they're fabulous :) - 1/4/09

    Love this recipe!! I wasn't sure what to expect but these turn out great! The mixture is very thick, but the muffins are light and fluffy. I will definitely be making these over and over again! - 8/15/10

    Loved them. So easy and really good. I made only 12 from the recipe though (regular sized muffins, I think 18 would be too small). So they were 180 calories each. I would definitely make them again! - 11/23/10

    This was soo good, I had to make them festive for Halloween, and I took a pic for ya (Pumpkin Raisin Spice Muffins for Halloween). I added raisins and water, made some not really icing and decorated, they came out great!
    I will def make again, maybe add something different for xmas. Thank you! - 9/29/10

    Made it with squash from the garden. Nobody knew the wiser. My 11 month old son loved them. I did too. Spread some low-far cream cheese on top. So yummy. Definately will make again. - 2/27/08

    Made these last night to bring to work today for my staff as a treat, well my children and husband loved these. The ones i did get to bring to work are gone already and that was only 45 min. so great recipe and soooooo easy will make these often. Thank you - 6/30/10

    I've been a fan of the original WW recipe (spice cake mix, canned pumpkin, 1 cup water) for years. My picky kiddos love them as well. I look forward to implementing the bagged mini-muffin suggestion, and just for kicks I will try substituting a reduced sugar white cake mix next time as well. Yum! - 4/18/10

    Will definitely be making these again. How much easier can it get. I made them in a mini bundt pan and added fat-free cream to the center for a quickie dessert. Because calories are low for the muffin part, the added cream doesn't add all that many calories. Will try it in place of pumpkin pie. - 11/20/09

    Very good, I added and egg and 2 tbs of water, the first time I made them I added applesause maybe a 1/3 of a cup and they were a little better with the applesauce included. - 3/7/08

  • I am NO cook, so a 2 ingredient recipe is right up my ally. Used carrot cake mix w/pumpkin. Made 12 normal size muffins. Really moist-maybe could of cooked a bit longer(did about 22 min). I think I had most eaten w/in 2 days. ouch! Very good!! Am mkg again for Thanksgiving. - 11/1/12

  • I made this with a yellow cake mix and added half teaspoon each of cinnamon, cloves and nutmeg. Before baking i sprinkled a bit of cinnamon sugar on top of each. 20 minutes later, we had the perfect pumpkin spice muffins. Next time I'd like to add some walnuts and/or raisins. - 10/23/12

  • Made this recipe last night and from previous reviews decided to add 1/2 cup water. Baked for 25min and they were a little TOO moist. Almost like they hadn't been baked enough. Other than that they tasted great. Just next time I would add as much water. - 9/6/12
