Chicken with Summer Vegetables

Introduction

Number of Servings: 6

Ingredients

    2 large boneless, skinless chicken breasts
    2 zucchini, sliced
    1 summer squash, sliced
    4 small red potatoes, quartered
    1 28-oz can Hunts Tomatoes w/Basil & Onion
    1/3 cup Veggie Shreds

Directions

Spray 9 x 13 casserole dish with non-stick spray. Cut chicken breasts into 6 pieces. Cover with cut squash and potatoes. Top with tomatoes. Place in oven for 50 minutes on 375 degrees.

Remove from oven and top with Veggie Shreds. Return to oven for 10 minutes or until mixture melts.

Serves 6 with 1 piece of chicken and generous veggies.
