Kate's Taco Salad

Number of Servings: 12

Ingredients

    *Jennie-O Extra Lean Ground Turkey, 20 oz
    *Onions, raw, 1 cup, chopped
    *Old El Paso Taco Seasoning, 6 tsp
    *Bush’s Vegetarian Baked Beans, 1.75 cup
    *Kuner's Southwestern Black Beans, 1 can
    *1/4 cup water

Directions

Cook onions and turkey in nonstick skillet until turkey is no longer pink. Add water and taco seasoning and cook until sauce thickens. Add beans and heat through.

I use this as a topping over a large mixed green salad with whatever vegetables are on hand (peppers, tomatoes, onions, avocado, cilantro, etc.). Great alone, or top with shredded cheese, a dollop of light sour cream, salsa, or crumbled tortilla chips.

Nutrition info is for the topping mixture only--salad ingredients and toppings will alter the calorie count. Makes 12 1/2 cup servings.
