Cole's Marinara Primavera

Cole's Marinara Primavera

Introduction

You can use any veggies that you have on hand. I added the peppers, as they were not in the orginal recipe. I used 1.5 Cup for my serving size.

You can put it on top of rice, pasta, noodles or just as a side!

This came out not as tomatoe as I would have liked. I think more maters are needed... see the picture the way it was suppose to look :)

Directions

1. Sautee a chopped onion in olive oil with herbs. If you like it spicy, add plenty of red pepper flakes
2. After the onions have color add chicken. Sautee until the chicken and onion are completely cooked.
3. Add some white wine or red wine if you want it to be more pungent.
4. Add one chopped yellow squash, one chopped zuccini, and one pepper. Simmer covered for about 10 minutes.
5. Add chopped tomatoes. I use a combo of hot house and roma. Also add finely chopped garlic, I use lots! Continue to simmer about 20-30 minutes or until tomatoes start to cook down.
6. Last add mushrooms. Stir, cover and simmer about another 20 minutes.
