Southwestern Egg Scramble

Introduction

This is a low fat breakfast food that I make in bulk on Sunday night so I can heat up small portions all week long for breakfast. It is spicy, but a low fat alternative for a hot breakfast. Ingredients

    1 large container Southwestern Egg Beaters
    1 16oz roll of Jennie O Turkey Breakfast Sausage
    1 cup (or more if you prefer) chopped Green or Red Bell Peppers
    1 cup (or more if you prefer) Kraft Fat Free Shredded Cheddar Cheese

Directions

Makes about 8 1-cup servings.

Chop bell pepper and set aside. Cook turkey sausage until brown, crumbling as you cook it. Drain off any fat (although there usually isn't any with this type of sausage). Add Egg Beaters, bell peppers and cheese. Cook until Egg Beaters are done.
At this point, I usually let it cool completely before storing it in a plastic container in the fridge and I eat small portions of it for breakfast all week. My family also loves it on Saturdays.
