IntroductionWonderfully tasty, super healthy, low calorie and worth the effort. Wonderfully tasty, super healthy, low calorie and worth the effort.
1 cup whole wheat pastry flour (whole wheat
flour is fine but not quite as light)
1/2 cup oats (put in blender for a few seconds)
2 T. Flax meal
3-6 envelopes Stevia or Splenda
2 tsp. baking powder
1 tsp. baking soda
3/4 cup buttermilk or sour milk
3 TBSP applesauce, or mashed fruit (I use
4 mashed apricots)
1/2 Cup blueberries, cranberries etc (optional)
Fold them in. Spoon into sprayed muffin tin. Makes 12 muffins.
Bake 400 degrees 12-15 min. Only 57 calories without the blueberries and 63 with.
