Ingredients

6 tbls. Butter
2 tbls. minced onion
6 oz. can lump crab meat
2 tbls. parsley
1/4 tsp. garlic powder
20 Ritz crackers, crushed
6 fillets of Flounder or other white fish
2 lemon wedges
1/4 cup grated parmesan cheese
3 tbls. butter
Directions
1. Preheat oven to 375 degrees F (190 degrees C). Lightly coat 9X13 inch baking pan with cooking spray.
2. Melt butter in frying pan over medium heat. Add onion and saute for 1 minute. Stir in crabmeat, parsley, garlic powder and cook 1 minute more. Remove from heat and stir in crushed crackers.
3. Spread mixture over fillets; sprinkle with lemon juice and parmesan cheese. Roll up fillets, seal with toothpicks and place in prepared baking dish. Dot each with butter and cover pan tightly with foil.
4. Bake in preheated oven for 15 to 17 minutes until fish flakes.
