4 cans (14.5 oz ) stewed tomatoes (58 oz total)
1 Cup tomato juice
2-3 oz pork per person
1 Cup rice (uncooked)
1-2 Tbsp shredded cheese per person

Gently mash to make more liquid and break up tomatoes into smaller pieces.
Add tomato juice (to make approx 8 C of liquid).
Add pork (or 2-4 T butter/margarine).
Pork can either be cut into bite-size pieces or kept in 1-serving portions.
Cook on medium heat until pork is mostly done, stirring occasionally, about 5 minutes.
Add uncooked rice.
Turn up heat to slow boil for 10 minutes, stirring frequently, so rice does not stick.
Turn heat down to low and cover, stirring occasionally until rice is done.
Allow to sit for 3-5 minutes if casserole consistency is preferred.
Sprinkle top with shredded cheese.
