I got this recipe from a school cookbook, it contains an abundance of fresh veggies. I adjust the recipe to my personal taste, but I kept the values for the recipe as follows. Enjoy! Ingredients

    1/2 Head Fresh Iceberg Lettuce
    1 c. fresh Spinach
    1 washed, shredded Carrot
    I chopped onion
    1 fresh, chopped celery stalk
    5 sliced fresh radishes
    1 medium sliced fresh cucumber
    1 medium sliced fresh green pepper
    5 to 7 jars italian green or black olives
    1/4 c. olive oil or to taste
    1/4 c. red vinegar ro to taste
    salt and pepper to taste
