If you exchange the sugar for splenda, the cream cheese for tofu and the vanilla wafers for 18 graham crackers you end up with an Under 100 Calorie Cheese cake.....Add a couple tablespoons of coco powder and you get a chocolate cheesecake. - 1/26/10

This is great! I LOVE cheesecake, and this way it is portion controlled and I don't cheat while slicing! I add lots of sliced strawberries on top to get that fruit in. - 8/7/08

  • I used splenda as well, added lemon juice to half and chocolate power to the other half. Both were outstandingThis is a great recipe and the cupcake satifies my taste buds for a sweet treat. Thanks for sharing. - 6/21/13

  • This little mouthful is perfect! I always find a whole slice to be too much anyway, but this mini is perfect for a bite after dinner. - 5/27/13

  • I followed the recipe exactly. I'm not sure what I did wrong, but the vanilla wafers floated to the top while baking. When I took them out of the oven, they looked like poached eggs! In future, I will cut the sugar by a third or half and try graham crackers as others suggested instead of wafers. - 3/30/13
