Swiss Onion Soup

Introduction

Ingredients

    8 Tbsp. Unsalted Butter
    3 Medium Onions, Thinly Sliced
    2 Tsp. salt
    1/4 tsp. White Pepper
    6 Medium Slices French Bread
    1 tsp. Sugar
    1/2 Gallon of Milk
    1 Pound Gruyere (or Swiss) Cheese, diced

Directions

Melt the butter over medium heat in a large heavy stockpot. Cook the onions with salt and pepper until soft but not colored, 15 minutes. Cut the bread inot medium dice and add to the pot along with the sugar. Sitr constantly for about a minute, until the bread absorbs the butter. Add the milk and bring to a boil. Add the cheese, stir, and reduce to a simmer. Cook, uncovered, stirring occasionally, for about an hour and fifteen minutes. Seve immediately. Serves 8 to 10.
