3 Medium cucumbers Peeled ( I like the English Variety) 1 Bunch of scallions 8 oz. of Seasoned rice vinegar 1 heaping teasoon of sugar 1 tsp. salt dash of black pepper
Peel and thinly slice the cucumbers (Iuse a mandolin on the thin slice setting). Put in a large bowl and sprinkle with the salt. Allow to set for 15-30 minutes. Finely slice the scallions and add to the 8 oz. of vinegar along with a dash or 2 of black pepper and the sugar. Stir to mix wlll and allow to sit while cucumbers are resting. Drain all liquid from cucumbers and place in container with tight fotting lid. Add the vinegar mixture and mix all well. Refrigerate for at least one hour, but the longer the better before serving. Makes about 6 3/4 cup servings.
