Ingredients

    2 large eggs
    2 egg whites
    1/2 cup of salsa
    1/2 cup of Colby & Monterey Jack cheese
    1 tbsp of sour cream
    1 whole wheat soft tortilla shell

Directions

Combine 2 large eggs with 2 egg whites and beat until smooth. Scramble to desired taste. Warm tortilla shell and 1/2 cup of cheese in microwave for 20-30 seconds. Add eggs, 1/2 cup of salsa and 1 tbsp of sour cream. Fold over and enjoy. Makes one serving.
