8 fresh figs, quartered
zest of one lemon
1 lb boneless, skinless chicken breast
salt and pepper to taste
1 tsp dried parsley
1/4 cup water
1/4 cup fresh lemon juice
1/4 cup red wine vinegar
1/4 cup Brown Sugar Splenda
Spray a 8x11" cooking dish with Pam. Put figs in dish and sprinkle lemon zest on top. Season chicken with salt, pepper and parsley. Place chicken on top in dish.
Mix water, lemon juice, vinegar and Splenda in a bowl. Pour mixture over chicken and bake for 30 minutes. Baste chicken with sauce halfway through cooking time.
Makes 4 Servings.
