Carrot/Raisin Slaw

Introduction

I would eliminate the salt and would add a little lemon juice to the mayo. Also use a light mayo. I would eliminate the salt and would add a little lemon juice to the mayo. Also use a light mayo.
Number of Servings: 6

Ingredients

    6 medium Carrots (or 10 oz. bag already grated - from the store)
    3/4 C. diced Celery
    1/4 C. diced Onion
    1/3 C. Raisins
    1/2 C. diced Apple
    1/2 C. Mayonnaise
    Salt & Pepper

Directions

Grate the carrots by hand or in food processor or use the 10 oz.bag from grocery store. Toss with celery, onion, raisins, and apple. Mix in the mayonnaise, season well with salt and pepper, and chill thoroughly. Makes about 4 1/2 cups, so serving size is 3/4 cup.
