Date-Pecan Pick-me-Up Candies

Introduction

These little candies are chewy and satisfying. You could substitute any nuts or dried fruits in this recipe, or add seasonings to make a unique mix. (Using a less fatty type of nuts could make them even healthier.) These little candies are chewy and satisfying. Number of Servings: 26

Ingredients

    Dates, 1.25 cup, pitted, chopped (about 13 medjool dates)
    Pecans, 3 cup, halves
    Dried, Unsweetened Cranberries, 1/2
    pinch of salt


Directions

Pulse the dates in a food processor until they form a smooth paste. Scrape the date paste into a bowl. Finely chop the pecans in the food processor and add to the bowl. Chop the cranberries and add the to the bowl along with a pinch of salt.

Knead the ingredients together until they form a slightly crumbly ball.

Measure portions with a tablespoon. Cut squares of waxed paper and twist them around the blobs, similar to the way taffy is packaged.
