Yummy Low Fat Zucchini Bread

Introduction

Very moist, flavorful zucchini bread that has almost no fat, thanks to egg replacement and applesauce. Makes a great breakfast or snack item. My kids inhale it! Number of Servings: 32

Ingredients

    egg substitute: 3/4 cup
    applsauce: 1 cup
    granulated sugar : 2 cups
    SHREDDED zucchini: 2 cups
    vanilla extract: 1 tablespoon
    baking soda: 1 teaspoon
    cinnamon: 1 tablespoon
    nutmeg: 1 teaspoon
    salt: 1 teaspoon
    flour: 3 cups

Directions

Mix in order. Bake in small greased & floured loaf pans @ 350 degrees for 30-35 minutes. Makes 4 small loaves cut into eight slices each. One serving=1 slice.

    This has helped my late afternoon hunger with a low-cal, low-fat yet very satisfying option. I like that it is very moist as well. I made it with half sugar/half Splenda and half white flour/half whole wheat flour. Turned out great!!! - 2/26/09

    Very tasty, I used real eggs instead of egg replacer and I used half whole wheat flour and half white unbleached flour. They turned out very tasty and I love having extra loaves to freeze for later. Thanks! - 2/1/09

    I thought it was good, but unGODly sweet (and I didn't use the full 2 cups of sugar). Next time I plan on cutting the sugar down to 1.5 or maybe even 1.25 cups. Other than that, very moist - good recipe :) Oh, and used all whole wheat flour instead of white flour. - 7/14/10

    It was very good, and my two year old had two pieces! I was able to make one loaf and 6 muffins out of the mixture, so the calories must be higher. A tiny bit chewy, but yummy! - 7/25/09

    This was an easy recipe that consisted of things I usually keep on hand. Very moist and flavorful for being healthy! My husband gobbled it right up..didn't tell him there were veggies in it! I will try to decrease the sugar next time by using part sugar and part sugar replacement. Very good though! - 9/30/08

    YUM! This recipe is very moist and delicious. Easy to make and has a great spice mix. The 4 smaller loaves work out well, but I have made one large loaf. - 8/27/08

  • I used 1/2 cup sugar and 1 cup Stevia, and half whole wheat and half white flour. Also added some allspice and upped the cinnamon because we like it spicy. It turned out wonderfully, and is our zucchini bread of choice now. Thanks for the recipe! - 10/17/11

  • Delicious! I also used 1/2 cup less sugar and some of the flour I used was whole wheat, and I used a mixture of egg white and whole eggs. I made 2 full size loaves and froze the second one. Was very good, in fact, it was hard not to eat too much! - 10/7/10

  • This was good. I used 1 egg cause i didn't want to mess with figuring the egg replacer. Funny thing: i forgot one of the cups of flour so i made another batch! I have 4 mini pans that are attached so i made one with chocolate chips, one plain, one w/cranberries & walnuts and the last w/blueberries - 8/27/10

  • I used only one cup of sugar and it was still PLENTY sweet. I wanted to use whole wheat flour, but unfortunately, I am out of it right now. Also, instead of the egg substitute, I used one whole egg. Very, very moist. - 8/20/10
