IntroductionBasic bran muffin recipe. This can easily be altered to include fruit or nuts.

4 beaten eggs
3 cups sugar
1 cup softened butter (real is best)
5 cups Flour (All purpose)
1 Tbsp AND 2 tsp baking soda
1 tsp salt
2 cups boiling water
2 cups original Fiber One cereal
4 cups bran flakes
1 Quart buttermilk (lowfat)
2. In a separate bowl (large) Cream butter and sugar together. Add in eggs, mix on low and set aside.
3. Pour the buttermilk over the cereal and stir. Then pour the cereal mixture into the butter mixture. Hand stir. Set aside.
4. In another bowl sift flour, baking soda and salt together.
5. Mix in with main ingredients ONLY till moist. Do not over stir. Do not use a mixer - hand mix only
Bake 375 degrees 15-22 minutes. Toothpick will come out clean.
This makes 60 muffins using just under 1/4 cup of batter per muffin.
3 apples (cored and finely chopped)
2 Tbsp cinnamon
***Mix apples and cinnamon together and spoon just a bit over each muffin before baking. This adds a lot of flavor and hardly any extra calories.
