Garlic Chicken Pasta

Introduction

A delicious, quick meal. A delicious, quick meal.
Number of Servings: 4

Ingredients

    2 chicken breasts (sliced)
    3 roma tomatoes (diced)
    2.5 cups of whole wheat penne pasta
    .5 cup of olive oil
    1 cup of chicken broth/stock
    3 cloves of garlic OR two spoonfuls of minced garlic
    2 tbsp of garlic powder
    pepper

    *chicken rub optional

Directions

slice chicken and add chicken rub/seasoning
add olive oil to pan with garlic and heat (gentle)
add chicken to pan
add tomatoes to pan
heat water to boil pasta, add pasta
add chicken stock to chicken pan with onion powder and pepper
add cooked pasta to chicken pan
heat for a few minutes

makes 4 one cup servings

  • This recipe looks very good but I question the calorie count. I think .5 cup olive oil is excessive. I will try it tonight with cooked chicken to reduce the calories. - 7/6/09
