Lucy's Pasta Bake

Introduction

Our fridge broke so I essentially threw together everything that hadn't gone bad! Delicious. Our fridge broke so I essentially threw together everything that hadn't gone bad! Delicious.
Number of Servings: 8

Ingredients

    1 box Elbow Macaroni pasta (I used whole wheat from Eating Right)
    2 cups grated cheddar cheese
    1 can pasta sauce (I used Catelli Thick and Chunky)
    1/2 cucumber
    1/2 red onion
    1/2 yellow bell pepper
    1/3 cup breadcrumbs (optional)

Directions

Pre-heat oven to 400*

1. Boil water and cook pasta to taste.
2. Chop vegetables (add as many as you like!) and sautee in a pan.
3. Once pasta is finished, drain, mix with pasta sauce and set aside.
4. In a large casserole dish, layer pasta with cheese and top with the sauteed vegetables. Add more cheese if you like and layer remaining pasta.
5. Finish with a layer of cheese and breadcrumbs, if desired. Bake for 15-20 minutes, depending on your oven, and enjoy!
