* Cod (fish), 16 oz
* *Lawry's Taco Seasoning, 8 tsp
* Olive Oil, 1 tbsp
* *La Tortilla Factory - Low Carb Tortilla, 6 serving
* Cabbage, fresh, 1 cup, shredded
* Kraft Mayo Light Mayonnaise (Mayo), 2 tbsp
* Cider Vinegar, 1 tbsp
* *Splenda, 1tbsp
* Pepper, black, 1 tsp
Combine 1 cup shredded cabbage (about 1/2 bag), 2tbsp light mayo, 1tbsp cider vinegar and 1tbsp splenda. Stir well and refrigerate while cooking fish.
In frying pan put 1tbsp olive oil on high heat, add 3/4 cup water, cod and taco seasoning. Cook fish until water has evaporated turn to low heat and continue cooking until fish flakes with fork.
In a different frying pan on med-high heat warm tortilla one at a time until they are the way you like them. I like mine a little crispy on one side a little less crispy on the other.
Put 1/6 of the fish and slaw into each tortilla.
Add salsa if desired. Goes well with black beans and rice.
