Zucchini Bread

Ingredients

3 C. Flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon
3 eggs
1 C. oil
2 1/4 C. sugar
3 tsp. vanilla
2 C. zucchini
Directions
Grate zucchini. Sift flour, salt, soda, powder, and cinnamon. Beat eggs, oil, sugar, and vanilla. Add four mixture. Mix well. Add zucchini. Pour into 2 8 inch, greased and floured, loaf pans. Bake at 325 for 40-60 minutes (until toothpick comes out clean). Cool 20 minutes. Makes 2 loaves, 12 slices each.
