1 cup lowfat buttermilk 1 egg 3 Tb canola oil 6 Tb white flour 6 Tb buckwheat flour 1 tsp Baking soda 1/2 tsp sugar
Mix buttermilk, egg and oil and a mixing bowl. Add rest of ingredients and mix with a whisk. Heat griddle. Spray with pan spray or lightly oil with canola oil. Cook pancakes on griddle. When bubbles start to break, turn and cook for a short time on the other side. Makes 2 servings.
