Number of Servings: 8

Ingredients

    1 Large Egg (beaten with a whisk - taking out the white stuff)
    1/4 cup sweetener
    1/4 cup White Vinegar
    Salt and Pepper to taste
    1 head of cabbage sliced into pieces
    Large mixing bowl

Directions

slice up the cabbage ahead of time and place in large mixing bowl so you can focus on making the dressing as it requires your full attention

whisk one large egg in a medium bowl taking out the white piece

add the sweetener and the vinegar and whisk again

pour into a warm non stick pan on low heat and stir constantly on low. Be patient. It will eventually thicken. You can turn the heat up a little higher to get it going and to bubble, but quickly turn it down. When it is thickening, take it off the heat as it will continue to thicken with the heated pan. Continue stirring for a little bit as it cools.

Pour onto the cabbage in large mixing bowl and mix it up. Don't worry if it looks like you don't have enough of the dressing. It will all mix in. Wait to salt and pepper when you are ready to serve or salt and pepper each dish separately.

This base dressing can also be used as a hot bacon dressing for salads - just add bits of bacon to the dressing and pour on salad when ready to serve.
