In a medium bowl, combine corn, bell peppers, onions, cilantro, & beans. Mix well. Whisk together remaining ingredients: toss with bean mixture. Cover & chill at least 1/2 hour.

Loved this! Looking for something healthy for the superbowl get together and this worked great. My corn was really sweet so I countered with a the juice of one lime and added guacamole. I also put some warm flour totillas and some cut up chicken breasts for a nice wrap-filling and healthy. YUM!

I have made a similar salad, and also added lime and cucumbers. I usually salt the cucumbers after I chop them, and keep them in the strainer over a bowl. This allows for the water to drain and it won't make the salad soggy.
I just had this for lunch today, very tasty! It's so easy to make, pretty inexpensive ingredients, and will keep in the fridge for a while. Perfect for spooning into a tuperware and taking to the office for lunch.
The casserole tastes very good =) I couldn't follow the whole recipe because I didn't had a pepper and a few of the spicery. Unfortunately I didn't even had wine vinegar so I used apple vinegar instead of it.
Made this for a family BBQ and it disappeared fast. I loved it. Has all the flavours I love - especially fresh cilantro. I've been asked to bring it to my niece's housewarming next weekend....I'll make a HUGE amount this time.
