Loved this! Looking for something healthy for the superbowl get together and this worked great. My corn was really sweet so I countered with a the juice of one lime and added guacamole. I also put some warm flour totillas and some cut up chicken breasts for a nice wrap-filling and healthy. YUM! - 2/7/10

  • I have made a similar salad, and also added lime and cucumbers. I usually salt the cucumbers after I chop them, and keep them in the strainer over a bowl. This allows for the water to drain and it won't make the salad soggy. - 10/29/10
