1 c. applesauce
1 c. sugar
2 c. whole wheat pastry flour
1/4c flax seed, whole
1 1/2t. baking soda
1/2 t. baking powder
1 tsp. salt
2 c. shredded zucchini
1/2c chopped pecans
In a seperate bowl mix together flour, cinnamon, nutmeg, backing soda, salt, falx and baking powder.
Add dry mixture along with zucchini to egg mixture. Stir in pecans.
Pour into 2 loaf pans sprayed with cooking spray. Bake in 350pre-heated oven for about 45 min. or until done. Allow to cool for 10 min. in the pan.
Cut each loaf into 12 equal slices
