Introduction

Smaller version of another one that we found. Used a dozen eggs as opposed to 18. Looks like a good enjoy some now and save some for the busy week dish. Smaller version of another one that we found. Ingredients

    - 12 eggs beaten (maybe experiment with egg sub too)
    - 1 T F/F 1/2 & 1/2 or Milk
    - 1 tsp Seasoning (recipe calls for Spike brand)
    - 3 cups Broccoli flowerets
    - 3/4 cups low fat cheese (mexican blend recommended)

    OPTIONAL TOPPINGS:
    - Low Fat Sour Cream
    - Avjar Red Pepper Spread

Directions

This makes about 5 servings

- Preheat oven to 375 degrees
- Spray 10x14 glass casserole with cooking spray
1) Cut broccoli into 1 inch pieces and blanche in boiling water for no more than 5 minutes
2) Mix all eggs in bowl with F/F 1/2 & 1/2, seasoning, black pepper to taste, and combine
3) Put drained broccoli in casserole
4) Sprinkle with cheese
5) Pour over egg mixture
6) Blend
7) Cook for about 25 minutes or until browned and slightly puffy

  • I wouldn't make it because of the ingredients. Too many eggs (cholesterol problem). Also, With my gerd, I don't eat mexican seasonings or eat peppers. - 8/9/08

    I have GERD too. Didn't have spike seasoning or mexican cheese blend so used lo-fat cheddar, Essence (Emeril's seasoning), & NSA seasonings. It just needs some flavor. Also it is only 2 eggs per serving. Maybe 1/4 cup egg sub. per egg you wish to ommit. (i.e. 6 eggs and 1.5 cups sub.) Yummy!
