DZ's Low Sodium Eggplant Mozzarella Parmesan

Number of Servings: 4

Ingredients

    Eggplant, fresh, 1 eggplant, peeled 1-1/4lbs
    Extra Virgin Olive Oil, 1.5 tbsp
    Mozzarella Cheese, part skim milk, 8 oz
    Tomato Sauce - No salt added, 1 cup
    Pepper, black, 1 tsp
    Oregano, ground, 1 tbsp
    Basil, 1.5 tbsp
    Garlic powder, 2 tsp
    Thyme, ground, 2 tsp
    Kraft Parmesan Cheese, 2 tsp

Directions

*Peel & slice eggplant legnth wise
*Brush both sides lightly with olive oil
*Cook on medium high grill 5 minutes per side
*Pre-heat over 350 degrees
*Combine Tomato sauces and spices (include spices to taste) in a bowl
*In 8X11.5 baking dish, lightly coat bottom with sauce
*Place 4 or 5 pieces of eggpland over sauce to create first layer
*Use about 1/2 remaining sauce to cover first layer
*Sprinkle with 1/2 the parmesan cheese then 1/2 the mozzarella
*Repeat with second layer (eggplant, sauce, cheeses)
*Bake in 350 degree oven for 30 minutes or until cheese and sauce is bubbling

**For a spicer dish include red pepper flakes between layers

***Delicious with lightly tosted 6 inch whole wheat peta round, lightly coated with olive oil & garlic powder
