Vegetable Beef Soup

Ingredients

    2 lb Beef roast
    10 c. Beef broth (may add boullion if desired)
    1 can Carrots
    1 can Corn
    1 can Peas
    1 can Green Beans
    1 can Potatoes
    1 c. Barley
    1 large can Tomato Juice
    Spices, as desired

Directions

Cut roast into bite size chunks, and place in pot with beef broth. Boil until meat is cooked. Add desired spices to broth. Allow liquid volume to cook down for 1 - 2 hours, stirring occasionally to prevent sticking.

Open, drain and rinse cans of vegetables, cutting potatoes into smaller pieces. Add rinsed vegetables to pot, and stir to mix. Open tomato juice and add to pot. Add 1 pinch of sugar or Splenda-type sweetner, and allow to simmer for 45 minutes - 1 hour.
