Vegan zucchini bread
Introduction

Ingredients

Egg replacer for 3 eggs
1/3 Cup Oil (your choice)
2/3 Cup Applesauce
1 1/2 C Organic Sugar
3 Cups Unbleached Flour
3 Teaspoons Vanilla
1 Teaspoon Salt
1/4 Teaspoon Baking Powder
1 Teaspoon Baking Soda
3 Teaspoons Cinnamon
3 Cups Grated Zucchini
1 Cup Walnuts or chopped dried fruit of your choice
Directions
In a large bowl mix together flour, cinnamon, salt, baking powder, baking soda and nuts or chopped dried fruit. Set aside.
In a large bowl beat egg replacer until light and foamy. Add oil, applesauce, sugar, grated zucchini and vanilla. Mix well. Gradually add dry ingredients until incorporated.
Pour into greased loaf pans and bake 1 1/4 hours at 325 degrees.
