Polenta- Lightened and quick version

Introduction

Polenta: butter and cream lurking in side dishes and desserts can put an end to good eating intentions. But it's possible to have sides and desserts without overindulging. In the case of this polenta recipe, simply tweaking the cooking technique completely changed its composition. Normally, dry polenta is sprinkled into boiling water. But bringing the polenta to a simmer in water and milk, gives it a smooth, rich quality without the need for butter or cream. A hit of Parmesan at the end adds richness and flavor. Ingredients

    Parmesan Polenta
    1 1/2 cups water
    1 cup skim milk
    1/2 cup fine-ground polenta
    pinch salt
    2 tablespoons parmesan, shredded






Directions

1 Bring water, milk, polenta and salt to a boil in a saucepan over medium-high heat, stirring often.
2 Reduce heat to medium and simmer until polenta is the consistency of hot cereal, 5 minutes.
3 Off heat, stir in the Parmesan and pepper.
4 Cover and keep warm until ready to serve.
