Low-cal, low-carb, low-fat omelette

Introduction

I enjoy this omelette because it's very filling and doesn't make me think of dieting. You can also use egg substitute or just egg whites to make it a little lighter. Ingredients

    1/2 package of frozen spinach
    1/4 cup chopped onion
    1/2 cup sliced canned mushrooms
    2 Laughing Cow Light Garlic & Herb cheese wedges
    1 whole egg
    3 egg whites
    Pam cooking spray

Directions

Cook the spinach according to package directions then allow to cool. Using paper towels, squeeze out as much liquid as possible. Drain the liquid from the canned mushrooms. Separate the whites of 3 eggs into a bowl and discard the yolks. Add the whole egg and whisk thoroughly.
Spray a small skillet with cooking spray and place over medium-high heat on a stove. Add the eggs and swirl the pan gently to remove air bubbles. When the eggs have started to set, add the spinach, onions, and mushrooms. Gently shake the skillet as needed to continue to remove air bubbles, when the eggs move around as a solid (kind of like they've made a pancake), go ahead and add the Laughing Cow cheese wedges--I cut them into smaller bits and spread them around, but you don't have to. After the cheese has been added, flip the omelette in half and continue cooking for about a minute. Remove from skillet and enjoy!
