I only made a half batch. I used all the ingredients but didn't put them in muffin cups. INstead, cooked them in the frying pan, without extra oil/or butter, since the veggies have a bit of liquid in them. Then as the egg began to set, I divided them into round patties and serve on wheat rolls. - 12/2/09

Not bad! I used egg substitute in place of 4 of the eggs, halved the olive oil, and didn't use bacon bits. Also used cheddar instead of mozza. I can't wait to freeze them and be able to just grab breakfast on my way out. - 7/2/09

Made this while I was preparing dinner and had for breakfast all week! I cooked on 350 (I didn't see where anyone ever answered that question). I substituted the green pepper for 2 Cups chopped zucchini, the mozz cheese for low fat cheddar and the bacon bits for Canadian Bacon. YUM! - 2/7/11

YUM! I used turkey bacon bits instead of pork...we don't eat pork in our household. These were delicious and reminded me of mini quiches minus the crust! - 12/23/08

  • Quick question - Anybody frozen these? How do they taste thawed? I'd like a quick breakfast, but it would be great if I could freeze these and reheat them, but I'm not sure how that'd taste.... - 7/30/12

  • Can you freeze this recipe? Since it makes so many servings it would be great to freeze and keep them for a quick and easy healthy weekday breakfast. I just don't know if it would keep well in the freezer.... - 8/3/11
