Onion Summer Savory Bread or Rolls

Introduction

This makes wonderful rolls which go great with navy bean soup. Or served as soppin' bread.

Number of Servings: 36

Ingredients

    1 3/4 cups Scalded Milk
    4 Tbsp Butter
    2 Tbsp Sugar
    1 tsp Salt
    2 cups minced onions
    2 Tbsp yeast
    1/2 cup warm water
    5 cups enriched bread flour
    1 cup whole wheat flour
    1Tbsp ground Summer Savory (sage may be used as variation)
    2 tsp ground Black Pepper



Directions

Pour the scalded Milk over 2 Tbsp of the Butter, the Sugar and the Salt. Stir until butter is dissolved. Saute the Onions, Summer Savory and Black Pepper in the rest of the butter until golden, about 10 minutes over med low heat. Stir so as not to burn. Dissolve the yeast in the warm water. Add to the milk mixture after it has cooled. In a large bowl mix together the Whole Wheat Flour and 1 cup of the Bread Flour add the milk/yeast mixture and mix well, then add the rest of the flour and the cooled onions and mix throughly. Turn out on a floured board and knead until elastic. Place in a buttered bowl, cover and let rise until doubled. Punch down and let rise again for 30 minutes. Shape into 36 rolls or 2 loaves and place in appropriate pans. Let rise again until doubled in size and bake. Both in 400 oven for 10 minutes, then at 350 until browned and done.

Makes 36 rolls or two loaves of bread
