Ingredients

    18 oz pork chops, cut into stir-fry strips1 cup salsa OR picante sauce1/2 cup peanut butter2 tablespoons soy sauce2 tablespoons balsamic vinegar1 tablespoon molasses1 tablespoon water1 teaspoon chili powder1/2 teaspoon ground ginger1/2 teaspoon garlic salt1/4 teaspoon pepper1 tablespoon vegetable oil1 tablespoon sesame seed, toasted if desired2 tablespoons thinly sliced green onions3 cups hot cooked rice

Directions

1. For sauce, in a medium saucepan combine salsa, peanut butter, soy sauce, vinegar, molasses and water. Bring to boiling, stirring often. Keep warm.

2. Meanwhile, in a plastic or paper bag combine chili powder, ginger, garlic salt and pepper. Add pork strips; shake until pork is coated with spice mixture.

3. In a large skillet heat vegetable oil over medium-high heat; cook and stir pork strips for 2-3 minute or until cooked through.

4. Spoon the sauce onto individual plates. Arrange the pork strips on top of sauce. Sprinkle with sesame seed, then top with green onions. Serve with noodles or rice.

Serves 6 (3 oz pork and 1/2 cup cooked rice)

    This reminds me of a West African dish called Mafe, made with more vegetables. My recipe calls for beef and sweet potato. Some call for lamb, egg or just veggies such as cabbage, yams, squash, okra, eggplant, potatoes, peppers or carrots. - 10/8/07

    First SP recipe I've tried. Will make it again. I toasted the sesame seeds, and cooked the pork with a slice of fresh ginger heated in the oil first. Served it on a nest of steamed cabbage, with a scoop of brown rice in the center. It was yummy! Will make it again. - 4/19/09

    This was very good! The pork was good on its on for leftovers w/o the higher-fat/calorie sauce. The sauce was amazing, I just used less sauce/serving & cooked brown rice. Next time I plan to add chicken broth to make it less thick and freeze the leftover sauce for the next time I make the pork. - 4/8/08

    The sauce was a little thick. We would also use garlic powder instead of garlic salt next time. We also found that we had to triple the rub to get enough on the pork. We love that you can change the salsa and get a whole new flavor out of it! - 4/6/08

    I will be making this often!!! I mixed the sauce right in with brown rice and topped it with grilled veggies marinated in zesty italian dressing. I also added hot sauce to the meat. - 4/3/08

    Kids really like the pork but didn't care as much for the sauce. I thought it was a little off somehow too but can't put my finger on exactly what the problem was.

    Next time I'll use the sesame seeds and green onions. Maybe that was the problem. At any rate there will be a next time. Thanks! - 1/24/09

    My husband and I enjoyed it, though one of my children wouldn't eat it (the picky one of course) I would have liked even more "heat" to it. To cut down on carbs and calories we used 1/4 cup of brown rice. - 7/9/08

    I used fresh garlic diced and cooked with the meat.
    I also put the pork on top of the rice and put the sauce over it. That way the rice was not so blah. - 3/6/08

    Wow! I thought this was the strangest combination but the ratings made me curious... I'm glad I tried it! Interesting and tasty twist. We ended up using chicken but I bet it'd be just as great with pork... good way to keep the menu interesting. :) - 5/15/07

    Made this last night. Meat was great, good flavour but on it's own without any other veggies was very dry. The sauce was also too thick. Overall a great tasting dish. Next time I will thin the sauce down and add sliced mushrooms, carrots and beans and stir fry with meat. - 4/7/09

    I ran it thru the recipe calculator. 448 calories, 20g fat, 667 mg sodium - using w/ low sodium soy sauce! Using garlic pwd instead of salt drops sodium to 539mg. 443 mg if 1 Tbs. soy sauce. Calculations include brown rice, not white, and pork tenderloin instead of chops. Does sound good! - 4/4/09

    Served with lightly steamed bok choi and snow peas. Snow peas contain a fantastic amount of nutrients. There is plenty of sauce to glaze the veggies. Use reduced sodium soy sauce or tamari and kick the ginger and chili powder up a notch, if you really want it spicy use Viet Namese chili sauce. - 4/5/10

    I make often but I cook meat first in half the oil in non-stick wok then remove to plate. I add other half oil plus one chopped sweet pepper plus a half cup chopped yellow onion and stir fry until almost done then add half cup sliced mushrooms. When cooked I add pork,rice,sauce and stir together! - 1/19/10

    I can tell just from the ingredients this is fabulous. As a vegetarian, you can't PAY me to eat pork! But I AM going to make it with Quorn cutlets (vegetarian) I love Thai anyway, and it's very easy to substitute Quorn cutlets for the pork. - 4/5/09

  • Excellent and easy. Dries out quickly when stored, so added 1 Tbsp salsa and 2 Tbsp water and allowed to sit for a few minutes. Moistens up nicely. But, Aaaaaagh!! I just realized that one serving is 422 calories, which is my limit per meal, and that doesn't include any vegies or fruit!! - 8/23/11

  • I notice a lot of people have substituted lower fat ingredients like peanut butter. A lot of these products may be lower in fat but you lose some of the nutrition and fat is usually replaced with sugar or other refined ingredients. Better to stick to the most natural. - 11/12/10
