2 cans (6oz. each) light tuna in water, drained & flaked
1 pkg. (6oz) stuffing mix, low sodium chicken flavor
1 c. shredded 2% cheddar cheese
1/2 c. shredded carrots
1/3c. light mayo
2 T. sweet pickle relish
3/4 c. water
Heat large non stick skilled sprayed with cooking spray on medium heat. Shape tuna mixture into 12 cakes, using about 1/3 cup for each. Cook tuna cakes, in batches, in skillet 6 minutes or until golden brown on both sides, turning carefully after 3 minutes.
