Chicken meatballs and pasta

Ingredients

    1 lb. ground chicken breast
    1/2 cup onion
    1/2 cup green peppers
    8 oz. rotini pasta
    1 jar Bertolli pasta sauce
    1 can mushrooms

Directions

1. Mix together the ground chicken, onions and green peppers. Form into medium sized meatballs. Pan fry (with a tablespoon of oil if necessary) until browned on all sides, and thoroughly cooked. (Make sure to always thoroughly cook chicken!)
2. Boil a large pot of water, add the rotini. Cook according to the package directions, about 8-10 minutes.
3. Thoroughly drain the rotini and return to the pot over medium heat. Drain and rinse the mushrooms (option, to remove excess sodium). Add the mushrooms, chicken meatballs and sauce to the pot. Combine well and allow to heat up.

Makes 4 servings.


Edit: This has a very different taste from regular beef meatballs. If you want more of that taste, substitute a portion of the ground chicken with the ground beef instead, though the calculated nutrition facts above will no longer be valid.
