    1 CUP QUINOA
    1 CUP WATER
    1/2 CUP CHOPPED AND PEELED CUCUMBER
    1/2 CUP CHOPPED GRAPE TOMATOES
    1/4 CUP CHOPPED PARSLEY
    JUICE OF ONE LEMON
    2-3 TBSP OF EVOO

Directions

BOIL WATER AND QUINOA UNTIL TENDER. LET COOL. ADD OTHER INGREDIENTS AND MIX TOGETHER. ADD A LITTLE SALT TO TASTE. ENJOY.
