Veggie Quiche

Number of Servings: 6

Ingredients

    4 eggs
    2 cups milk
    1/2 cup whole wheat flour
    3 tbsp butter (melted)
    1 1/2 plus 1/2 cups cheddar cheese
    1 cup broccoli
    1 1/2 cups cauliflower
    1/2 cup each of red, yellow, and green peppers
    1/4 cup onion
    1/2 cup mushrooms
    1 cup summer squash
    1 cup zucchini

Directions

Chop all veggies and set aside. Mix in 1/2 cup cheese.

Blend together eggs, milk, flour, butter, and 1 1/2 cups cheese. Pour into 9 inch pie plate.

Add veggies to mixture in pie plate.

Bake at 350 degrees until done (about 1 hour).
