Introduction

Like grandma's only with healthier substitutes. Like grandma's only with healthier substitutes.
Number of Servings: 20

Ingredients

    1/2 cup canola oil (or olive)
    1/2 cup natural applesauce
    3 eggs
    1.5 cups of brown sugar or similar
    2 cups of shredded zucchini
    1 tsp. baking soda
    2 tsp. cinnamon
    3 cups of wheat flour
    2 tbl. flaxseed
    1 tsp. salt
    1/4 tsp. baking powder
    3 tsp. vanilla

Directions

Makes 2 loafs - 10 slices each loaf pan. Preheat oven to 325. Mix ingredients in the order listed. Spray loaf pans with PAM or similar product. Divide batter into two loaf pans. Cook for 60 minutes. Do not over bake.
