Introduction

I tried a salad similar to this at a local restaurant and decided it was something I wanted to have more often (for less than $7 each). Baby spinach and pepper replaces arugula. I tried a salad similar to this at a local restaurant and decided it was something I wanted to have more often (for less than $7 each). Baby spinach and pepper replaces arugula.
Number of Servings: 1

Ingredients

    * 1 cup baby spinach
    * A dash of black pepper
    * .50 cup carrot strips
    * .25 cup thinly sliced pears
    * .50 oz thinly sliced or shaved Parmesan cheese
    * 3 tbsp vinaigrette dressing

Directions

Place 1 cup of spinach in bowl and add a dash of black pepper. Add about 1/2 cup of carrot strips, 1/4 cup of thinly sliced pears, 1/2 oz of thinly sliced or shaved Parmesan cheese.

Top with about 3 Tbsp of the vinaigrette dressing of your choice. (I use raspberry pomegranate.)
