(1) cup chopped carrots
(1) cup chopped onions
(1/2) cup chopped celery
(1) can diced tomatoes
(1) can white kidney beans/northern beans
(1/2) cup chicken broth
(2) lbs chicken breasts
Add italian seasoning and stir well.
Lightly salt and pepper chicken breasts and layer on top of vegetables.
Pour can of tomatoes on top.
Cook for 3-4 hours (HIGH) or 7-8 hours (LOW).
Optional: top with parmesean cheese when serving.
Notes: I used canned diced tomatoes with green chiles. Original recipe called for white kidney beans, but I used canned northern beans- rinse them well! I also did not have an Italian seasoning, so I used oregano, garlic powder and red pepper flakes to season. Cheese is always yummy, but I did not add it and didn't mss it at all.
