Grilled Shrimp Charmoula

Ingredients

    1 lb medium shrimp, raw, shelled and deveined
    1/4 cup olive oil
    1/4 cup lemon juice
    1/4 cup snipped fresh parsley
    1/4 cup snipped fresh cilantro
    3 cloves garlic
    1 1/2 tsp paprika
    1 tsp cumin
    1/4 tsp salt
    1/4 tsp black pepper

Directions

Combine olive oil, lemon juice, parsley, cilantro, garlic, paprika, cumin, red pepper, salt, and black pepper in a blender container. Cover and blend until finely pureed. Stir together shrimp and oil mixture in a bowl. Cover and chill for 20 to 30 minutes. Drain shrimp, reserving marinade. Thread shrimp on skewers. Grill shrimp on uncovered grill directly over medium hot coals about 15 minutes or just till they turn pink, turning often and brushing with marinade.
