Slow Cooker Guinness Beef Stew

Introduction

Have some beef with your beer! This special Guinness stew is easy to make, but gets a smoky depth of flavor from the tasty stout. We suggest bulking it up with extra veggies of your choice. Number of Servings: 4

Ingredients

    2 tbsp. flour
    1.5 lb. stewing beef
    2 tbsp. tomato paste
    3 cloves garlic, crushed
    1 medium onion, chopped
    4 sprigs thyme, bunched together
    1 bottle Guinness beer
    2 tbsp. olive oil

Directions

Coat beef in flour, salt, pepper, and cayenne. Brown quickly in olive oil, but not enough to cook through.

Add tomato paste diluted in 1/2 cup of water, onions, garlic, and tomato paste. Simmer for 5 minutes. Put in slow cooker.

Pour some of the Guinness (about half a bottle) into the pan and simmer for five minutes, scraping up bits on the bottom of pan. Add to slow cooker, along with the rest of the Guinness and the thyme.

Cook on low for 4 hours or until beef is cooked through and tender.

Serve on top of homemade mashed potatoes, garnished with scallions and fresh chopped parsley.
