Introduction

This is an easy way I found to get my kids to eat fish. Tehy love it!!! This is an easy way I found to get my kids to eat fish. Tehy love it!!!
Number of Servings: 10

Ingredients

    7 tilapia filets
    2 cups brown rice
    2 cups italian diced tomatoes
    1 chopped zucchini
    1 chopped yellow pepper
    1/2 chopped red pepper
    1/2 cup low fat chicken broth
    1 cup shredded cheddar cheese

Directions

Stir the rice, tomatoes, zucchini, yellow and red pepper, chicken broth in a pan that goes in the oven. Put tilapia filets over this mixture and cover. Cook for 30 minutes at 375' then add cheddar cheese and cook an extra 15 minutes.

Serve and enjoy.
