Baked Potato Soup

Introduction

This is a great way to use up leftover baked potatoes. This is a great way to use up leftover baked potatoes.
Number of Servings: 8

Ingredients

    1 small onion diced
    5-7 slices of bacon cooked
    3 to 5 baked potatoes depending on the size of the potato
    3 tbsp. butter
    1/4 cup flour
    2 to 3 cups milk
    6 ozs. cheddar, mozzarella, or colby cheese
    Sour cream-optional topping

Directions

Fry bacon until almost done, add onions to bacon, saute on low. Remove bacon and onions and drain on a papertowel. Melt butter in soup pot over medium to low heat, add flour to butter and stir until smooth, gradually add milk continuing to stir. Mixture will thicken as it cooks. Add diced baked potatoes w/ bacon and onion. Cook over low heat add cheeses last two minutes. Garnish each bowl of soup with sour cream if desired
