Introduction

Make ahead to use on wraps, sandwiches, and salads. Make ahead to use on wraps, sandwiches, and salads.
Number of Servings: 16

Ingredients

    2 cups each of...
    Zucchini
    Green Pepper
    Yellow Pepper
    Red Pepper
    Onion
    4 T. Olive Oil
    Seasoning

Directions

Cut all veggies into 1" x 1" chunks.
Toss in olive oil and your choice of seasoning.
(Italian Herb, Garlic, Salt/Pepper, Fajita)
I use a large veggie pan on the grill. The veggies can be stirred as they cook. This pan has holes in it to allow the smoke to circulate but the holes aren't big enough for these large chunks to drop through.
