IntroductionThis is supposed to be a Vodka Sauce, but I left that out. This is supposed to be a Vodka Sauce, but I left that out.
1 cup Light Whipping Cream
2 Chicken Breasts, boneless/skinless
1/2 Large Onion [yellow or white]
3 cans Diced Tomatoes
1 tsp+ crushed red pepper
In a seperate pot, fry chicken until cooked and tender.
Add tomatoes & red pepper to diced onion and simmer for 15 minutes.
Chop/shred chicken and add to tomatoes and simmer for 15 more minutes.
Add cream, a little at a time until desired creamy-ness.
Simmer for 5 minutes.
Enjoy over your favorite pasta* and sprinke with shredded parmesan cheese*.
Makes about 5 servings.
