Corn Salad

Introduction

Canned corn tossed with fresh veggies in a delicious lime dressing. Canned corn tossed with fresh veggies in a delicious lime dressing.
Number of Servings: 4

Ingredients

    1 Lime
    2 Tbspn EVOOil
    1 Garlic Clove - minced
    2 tspn dried Cilantro
    1 tspn Crushed Red Pepper Flakes
    0.5 tspn Salt
    0.25 tspn Pepper
    1 Can Yellow Corn
    0.25 cup red pepper diced
    0.25 cup celery chopped
    0.25 cup red onion diced


Directions

Juice Lemon and whisk in Oil, garlic, salt, pepper, cilantro and crushed red pepper flakes.

Add in corn and veggies.

Zest lime in as well if you like.

Refridgerate for at least an hour and enjoy.

***add whatever amount of crushed red pepper you like based on your tolerance for spicyness!!

  • My boyfriend said he liked it, but I didn't like it at all. It sounded good, though. I think this could be good with a totally different dressing... maybe an italian dressing or oil/vinegar dressing. Definitely missing something important as is. - 8/30/08
